I’m kind of in deep love with this cake. Vanilla cake layers, pink vanilla buttercream frosting and filled with raspberry jam. Just a big old delightful explosion of raspberry pink cake cuteness.
I will always love making birthday cakes. I am a true believer in feeling special on your birthday – before T was born, my fave thing to do on my birthday was go to a matinee movie (even by myself if no one was available) and snack my face off. Another thing I try to do every year is take a photobooth picture. One day I’d like to have decades worth of them, and I can show my grandkids and they can get all freaked out by them, watching me age from one photostrip to the next! This pink raspberry buttercream cake was super special – I made it for a beautiful 90 year old woman. Yeah that’s right, guys – 90!
On one hand I can’t imagine making it to 90 years of life. But on the other hand, the rate in which life is speeding by, I can sort of see how it wouldn’t really be that far away. Man, I’ll be a brittle, probably crazy old Chinese lady at 90. I wonder what it feels like to know that your time on Earth is coming to an end, to know that it’s impossible to live much longer? What does it feel like to have 90 year old bones? What does a cake taste like when you’re 90?
When you’re 90 years of age you get two, no – three pieces of cake. You get to pick the raspberries off and eat them one by one if you want. You can throw the raspberries at your great grandchildren, even. So that seems pretty great. Maybe I’ll be able to look back in time and search for my blog on the internet when I’m 90. It might take me 12 minutes to type in “Coco Cake Land” but hopefully I’ll be able to do it.
