I had a very sweet interview indeed with Scout Magazine, conducted at To Live For aka our regular spot these days for all things DELISH – sausage rolls, croissant breakfast sammies, matcha lattes, banana bread, etc etc! THE BEST. Have you been yet??
Erin has been a huge inspiration to me for the last few years – I admire her so much, and she has been such a supporter of Plantcakes ever since I signed my book deal years ago!! I love Erin’s approach to vegan and plant-based eating – show the world how delicious it can be! If my cakes and baking happen to be a gateway towards encouraging folks to eat more plant-forwardly, or opening people’s minds to consider all the possibilities in the way we eat, that is a thumbs-up in my books!
